STRAWBERRY BELLINI SORBET
(makes 1 litre)
900g fresh strawberries
Juice 1 lemon
125ml sparkling wine
Wash the strawberries thoroughly and slice them into a large container. Add the sugar and mix thoroughly. Cover and leave the strawberry and sugar mixture to steep for one hour. Put the strawberries and sugar (along with any additional juice that has come out of the strawberries) into a blender. Add the juice of one lemon. Blend the strawberries, sugar and lemon together until smooth.
Pass the mixture through a sieve to remove the seeds. Stir in the bubbly! Pour the mixture into your ice cream churner (if you have one), following the manufacturer’s instructions. Alternatively, pour the mixture into a shallow dish and leave in the freezer. Remove every two hours and mix with a fork. For a fun way to finish off your Christmas lunch, pour the mixture into lolly moulds!
