Let’s face it. Things can get a little manic in the kitchen when you’re cooking up a storm for Christmas dinner or lunch. One of the easiest and most practical ways of saving time is to pick up some ready-made desserts and cake, and you can still add your personal touch by ‘dressing them up’ yourself!

Here are a few more tips:
* Make use of fresh fruit, beautiful flowers or chocolate pieces. Think about the general vibe of your function . . . are you wanting laid-back elegance, something colourful for the kids or a dessert that fits in with the colours of the party décor?
* To really make a statement, try putting an 18cm gateau on top of a 24cm. You can even mix and match the flavours!
* If you are using a less stable cake, then just follow this little tip for extra stability: poke a few wooden skewers into the 24cm gateau and cut them flush with the surface of the cake, then place the 18cm gateau on top of the 24cm gateau with a white cake card base to transfer the weight to the bottom plate. Then, simply pile on fresh strawberries or cherries, grated chocolate or even festive balls.
* Remember that mousse and fresh cream cakes and desserts will not stand for long periods out, so be careful if you are using your dessert as a table centre piece. If you plan on having your masterpiece on show for a while, rather stick to products that cope well at ambient temperatures.
